Grilled Steak Gyros with Cucumber Feta Salsa and Tzatziki Sauce

Grilled to perfection and piled high with a fresh cucumber feta salsa and lots of homemade tzatziki sauce, these grilled steak gyros are a fresh summer twist on the classic sandwich!

Ingredients

Grilled Steak

  • 1-1/2 pounds flank steak
  • 3 tablespoons olive oil
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh minced oregano
  • Salt and pepper to taste

Cucumber Feta Salsa

  • 1 medium cucumber, cut into 1/2-in cubes
  • 2 small roma tomatoes, cut into 1/2-in cubes
  • 1 small jalapeno, seeded and finely minced
  • 1/2 cup crumbled feta
  • 2 tablespoons fresh minced parsley
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Tzatziki Sauce

  • 1-1-/2 cups plain Greek yogurt
  • 1/2 cup minced cucumber
  • 2 tablespoons lemon juice
  • 1 clove minced garlic
  • 2 tablespoons fresh minced parsley
  • 2 tablespoons fresh minced mint
  • 6 pita breads and lettuce leaves for serving

Instructions

Grilled Steak

  • Pat steak dry and place in a ziplock bag. In a small bowl, whisk olive oil, lime juice, garlic, and oregano until smooth. Season with salt and pepper to taste. Pour marinade over steak and seal bag. Let marinate at least 1 hour.
  • Remove steak from marinade and place directly on a preheated grill. Grill 2-3 minutes per side until steak reaches your desired doneness (I would recommend a medium to a medium-rare cook)
  • Cover steak with tin foil and let rest 10 minutes. Thinly slice steak against the grain.

Cucumber Feta Salsa

  • In a small bowl, combine all salsa ingredients. Season with salt and pepper to taste. Refrigerate until ready to use

Tzatziki Sauce

  • In a small bowl, whisk all sauce ingredients until smooth. Season with salt and pepper to taste. Refrigerate until ready to use.
  • To assemble gyros, Place a lettuce leaf on each pita bread and top with grilled steak, salsa, and tzatziki sauce. Serve immediately and enjoy!
