Ingredients

Roasted Red Pepper Tzatziki Sauce

  • 1-1/2 cups greek yogurt
  • 1 cup jarred roasted red peppers, finely diced and divided
  • 1/2 cup finely diced cucumber
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon minced fresh mint
  • 1/2 teaspoon smoked paprika (or regular)
  • Salt and pepper to taste

  • 2 lbs ground chicken
  • 1 cup dry breadcrumbs (such as panko)
  • 1 large egg, lightly beaten
  • 1 clove garlic, finely minced
  • 1 tablespoon grated onion
  • 1 tablespoon fresh minced oregano
  • 1-1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • Toasted hamburger buns, lettuce leaves, thinly sliced cucumbers, red onion, tomatoes, and crumbled feta for serving

Instructions

Roasted Red Pepper Tzatziki Sauce

  • Place greek yogurt and 1/2 cup roasted red peppers in a food processor. Pulse several times until completely smooth.
  • Scrape yogurt into a medium bowl and stir in remaining diced roasted red peppers, cucumber, garlic, lemon juice, parsley, mint, paprika, and salt and pepper to taste. Refrigerate until ready to use.

Greek Grilled Chicken Burgers

  • In a large bowl, combine ground chicken, breadcrumbs, egg, garlic, onion, oregano, salt, and pepper. Very gently knead until just combined. Form mixture into 6 patties.
  • Preheat a grill to 375F. I would recommend grilling these burgers either on a greased grill pan or a sheet of aluminum foil (they tend to stick to the grill grates if you put them on directly) Grill chicken burgers, flipping once until golden-brown and meat registers 165F (about 8-10 minutes of cooking)
  • Assemble burgers by spreading a little tzatziki sauce on the bottom of a toasted bun. Place a lettuce leaf and several cucumbers on top, following with the chicken burgers, red onions, tomato slices, feta, and additional tzatziki sauce. Serve immediately and enjoy!
