Ingredients

Zucchini Sesame Soba Noodles

  • 2 tablespoons sesame oil
  • 1 large zucchini, peeled into ribbons using a vegetable peeler
  • 1/2 cup sliced green onions
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 2 tablespoons toasted sesame seeds
  • 9.5 oz buckwheat soba noodles cooked according to package instructions and kept warm
  • Salt and pepper to taste

Miso Ginger Glazed Salmon

  • 2 tablespoons miso
  • 1 tablespoon soy sauce
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons coconut sugar (or brown sugar)
  • 1-1/2 lbs salmon filets
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Additional green onions and sesame seeds for garnish

Instructions

Zucchini Sesame Soba Noodles

  • In a large skillet over medium-high heat, heat sesame oil until shimmery. Add zucchini and green onions to skillet and saute 3-4 minutes until tender and fragrant. Add garlic and saute 1 minute.
  • Reduce heat to medium and add soy sauce, rice vinegar, honey, and sesame seeds. Bring to low simmer, stirring occasionally until sauce is bubbly.
  • Remove from heat and toss soba noodles into sauce until evenly coated. Keep noodles warm while you prepare the salmon.

Miso Ginger Glazed Salmon

  • In a small bowl, whisk miso, soy sauce, ginger, and sugar until smooth. Set aside.
  • Pat salmon dry and season both sides with salt and pepper. In a large skillet heat olive oil over medium-high heat until shimmery. Add salmon to pan and sear 3-4 minutes per side until salmon registers 145F. Keep salmon warm and set aside.
  • Wipe skillet clean and add premixed sauce ingredients. Bring to a low simmer over medium-high heat until sauce is thickened and glaze consistency. Remove pan from heat and tuck salmon into pan, spooning some of the glaze on top.
  • Serve the salmon with the soba noodles, garnishing with extra miso ginger glaze, sesame seeds, and green onions. Enjoy!
