Smoked salmon lettuce wraps feature a fresh smoked salmon + veggie filling and a flavorful garlic walnut pesto tucked into crisp butter lettuce leaves. Easy to meal prep for lunch all week!

  • 6 oz smoked salmon, thinly sliced
  • 1 medium avocado, diced into 1/2-in cubes
  • 1/2 cup cucumber, cut into 1/2 in cubes
  • 1 medium sweet pepper, cored and thinly sliced into 1/2-in strips
  • 1 tablespoon lemon juice
  • 2 tablespoons minced fresh parsley

Garlic Walnut Pesto

  • 1 cup firmly-packed basil leaves
  • 1/2 cup chopped walnuts, toasted
  • 2 cloves garlic, minced
  • 2 tablespoons grated Parmesan cheese
  • 1/3 cup olive oil
  • Salt and pepper to taste
  • 8 medium butter lettuce leaves



  • In a medium bowl, combine all filling ingredients. Store in fridge until ready to use.

Garlic Walnut Pesto

  • Combine basil, walnuts, Parmesan, and garlic in food processor. With food processor running, drizzle olive oil through top, scraping down sides as necessary, until pesto is smooth. Season pesto with salt and pepper to taste.
  • When ready to serve, toss pesto with smoked salmon filling. Fill lettuce leaves with smoked salmon filling. Serve immediately and enjoy!
