Rhubarb Peach Bourbon Smash
Rhubarb peach bourbon smash is a refreshing summer cocktail with juicy peaches, firey bourbon, and a tangy homemade rhubarb syrup.
Rhubarb Simple Syrup
- 2 cups fresh (or frozen and thawed) rhubarb, diced into 1/2-in cubes
- 1/2 cup granulated sugar
- 1/2 cup water
Rhubarb Peach Bourbon Smash
- 4 medium ripe peaches, peeled, pitted and roughly chopped
- 1/2 cup lightly-packed mint leaves
- 1 medium lime, thinly sliced
- 8 oz bourbon
- Ice for shaking
- 8-12 oz club soda for serving
- Additional peach slices, lime wedges, and mint leaves for garnishing
Rhubarb Simple Syrup
In a medium saucepan over medium heat, bring rhubarb, sugar, and water to a simmer. Reduce heat to medium-low and allow to gently simmer 15-20 minutes until fruit is softened and liquid is slightly reduced.
Place a coffee filter or cheesecloth in a fine-mesh strainer set over a medium bowl. Strain syrup until nearly all of the liquid is strained through. Discard solids and cool syrup. (syrup may be stored in fridge up to 1 week)
Rhubarb Peach Bourbon Smash
Working in batches, place one chopped peach, a few mint leaves, and 1-2 lime slices in a cocktail shaker. Muddle mixture with a cocktail muddler (or just smash it with the back of a wooden spoon) until juices are released.
Add 2 oz bourbon and 1 oz cooled rhubarb syrup to cocktail shaker and fill shaker with ice. Shake cocktail well until condensation begins to form on outside. Strain cocktail into a glass filled with ice. Repeat muddling, shaking, and straining for remaining three cocktails.
Once all the cocktails are strained over ice, top each glass off with 2-3 oz club soda and stir well with a cocktail spoon. Serve smashes immediately and enjoy!
