Ingredients

Greek Couscous Salad

  • 3 cups cooked pearl couscous (cooled)
  • 1 medium cucumber, diced into 1/2-in cubes
  • 1-1/2 cups cherry tomatoes, halved
  • 1/2 cup kalamata olives, halved
  • 1/2 cup crumbled feta cheese
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons fresh minced parsley

Red Wine Dressing

  • 1/3 cup dry red wine (not cooking wine)
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey or agave nectar
  • 1/3 cup extra-virgin olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving, optional

Instructions

Greek Couscous Salad

  • In a large serving bowl, combine couscous, cucumber, cherry tomatoes, olives, feta, chickpeas, and parsley. Refrigerate until ready to serve.

Red Wine Dressing

  • In a medium bowl, whisk red wine, vinegar, mustard, and honey until smooth. Slowly drizzle in olive oil, whisking constantly until dressing is smooth. Season dressing with salt and pepper to taste.
  • When ready to serve, drizzle dressing over salad and toss to combine. Serve immediately with lemon wedges for squeezing over top if desired. Enjoy!

Notes

Storing Instructions
Store salad in refrigerator up to 4 days. For best results, do not combine salad with dressing until just before serving.
