Place pumpkin puree in the center of a kitchen towel. Gather up edges and squeeze pumpkin to release extra liquid.
Cream butter and sugars together until smooth. Mix in egg yolk, vanilla, and pumpkin. Fold in flour, spices, baking soda, salt, and chocolate until combined.
Scoop dough into 1-inch balls and place dough balls 2 inches apart on parchment paper-lined sheet pans. Flatten dough balls slightly.
Bake cookies at 350F 10-12 minutes until edges of cookies are lightly browned. Allow cookies to cool slightly before serving. Enjoy!
