- Chipotle - Yellow onion - Garlic - Cilantro - Lime juice
- Vegetable oil - Chicken broth - Brown sugar - Chicken thighs
In a blender or food processor, blend chipotles in adobo sauce, onion, garlic, cilantro, lime juice, vegetable oil, chicken broth, brown sugar, salt, and pepper until smooth.
Reserve 1/4 cup marinade and set aside for later. Pour remaining marinade over chicken thighs in a large bowl. Allow to marinate 2 hours or up to 12.
When ready to cook chicken, preheat a grill. Grill chicken over medium-high heat, turning occasionally until chicken registers 165F.
Brush reserved chipotle marinade over chicken and top with additional fresh cilantro. Serve chicken immediately while warm and enjoy!
