Chipotle Sweet Potato Black Bean Salad

This salad features...

- Sweet potatoes - Olive oil - Chipotle - Black beans - Avocado - Tomatoes

- Cilantro - Honey - Soy sauce - Lime juice - Cider vinegar

Prep sweet potatoes


Combine sweet potato cubes, olive oil, chipotle, salt, and pepper. Spread into a single layer on a medium parchment paper-lined sheet pan.

Roast sweet potatoes


Roast sweet potatoes at 400F 25-30 minutes until sweet potatoes are tender when pierced with a fork. Allow to cool.

Assemble the salad


In a large bowl, combine drained black beans, avocado, tomato, and cilantro.

Make the dressing


In a small bowl, whisk honey, soy sauce, lime juice, and cider vinegar until smooth. Slowly drizzle in olive oil, whisking constantly until dressing is smooth. Season with salt and pepper to taste.

Dress the salad
