- Baby potatoes - Broccoli - Olive oil - Chicken breasts - Butter - Shallot
- Garlic - Chicken broth - Heavy cream - Lime - Cilantro
Combine baby potatoes, broccoli florets, olive oil, salt, and pepper on a large sheet pan. Arrange in a single layer and roast at 400F 20-25 minutes until veggies are nearly tender.
Season chicken with salt and pepper well on both sides. In a large skillet over medium-high heat, sear chicken in olive oil and butter until chicken is golden brown.
Arrange chicken on sheet pan and roast chicken and vegetables an additional 10-15 minutes until chicken registers 165F and vegetables are tender.
Saute shallot and garlic until fragrant. Add chicken broth and heavy cream and bring sauce to a simmer. Allow to simmer over medium-low heat until sauce is thickened. Remove from heat and add cilantro and lime juice.
Pour cilantro lime sauce over roasted chicken and vegetables. Serve warm and enjoy!
