Green Goddess Pasta Salad

Ingredients

- Greek yogurt - Mayonnaise - Avocado - Parsley - Cilantro - Pesto - Capers

- Garlic - Lemon juice - Chicken breasts - Pasta - Cherry tomatoes - Peas - Feta cheese

Prep the dressing

Combine yogurt, mayonnaise, avocado, parsley, cilantro, pesto, capers, garlic, and lemon juice in a food processor or blender.

Blend the dressing

Blend dressing until completely smooth, scraping down sides as necessary. Season dressing with salt and pepper to taste and refrigerate until ready to use.

Grill the chicken

Rub chicken breasts with olive oil, lemon juice, salt, and pepper. Grill over medium-high heat, turning occasionally until chicken registers 165F. Allow to cool, then cut into cubes.

Assemble the salad

Combine cooked pasta, cherry tomatoes, peas, feta, grilled chicken, and dressing in a large bowl.

Serve the salad

Fold salad until evenly coated in dressing and season with salt and pepper to taste. Refrigerate salad until ready to serve. Enjoy!
