Combine diced apples, apple cider, cinnamon stick, spices, and maple syrup in a 2-quart slow cooker. Cook on low 4-5 hours or on high 2-3 hours.
Use an immersion blender, food processor, or regular blender to blend apple butter until smooth.
Return apple butter to slow cooker and cook on low 3-4 hours or on high 1-2 hours until apple butter is thickened.
Transfer apple butter to jars and store in refrigerator up to 2 weeks. Serve apple butter on toast, bagels, use it in baking, or in cocktails. Enjoy!
