Mediterranean Zucchini Noodle Salad

 - Zucchini - Kalamata olives - Artichoke hearts - Cherry tomatoes - Garlic - Feta cheese - Olive oil

 - Sun-dried tomatoes - Balsamic vinegar

Make the noodles

Use a spiralizer to cut 3 medium zucchini into zucchini noodles.

Make the dressing

Place sun-dried tomatoes, balsamic vinegar, water, and garlic in a food processor. Drizzle olive oil through top with machine running until dressing is smooth.

Build the salad

Combine zucchini noodles, kalamata olives, artichoke hearts, cherry tomatoes, and feta cheese in a large serving bowl.

Add dressing

Pour dressing over salad and toss until salad is evenly coated. Season salad with salt and pepper to taste.
