CHICKEN SALAD

1. In a blender, combine Greek yogurt, mayonnaise, avocado, parsley, cilantro, pesto, garlic, and lemon juice.

2. Blend dressing until smooth and season with salt and pepper to taste.

3. Shred or finely chop cooked chicken (rotisserie chicken works great!) 

4. When ready to serve, pour dressing over chicken.

5. Add chopped cherry tomatoes and additional avocado if desired.

Enjoy this gloriously green chicken salad in a lettuce wrap, over greens, or in a sandwich bun!
