In a large bowl, cream butter and sugar together until smooth. Mix in egg, vanilla, and red food coloring until smooth.
In a medium bowl, combine flour, cocoa, baking soda, and salt until combined.
Mix flour mixture into butter mixture until dough is just combined. Wrap dough in plastic wrap and chill 1 hour or up to 6 days.
Remove dough from refrigerator and roll into 1-inch balls. Roll balls in red sanding sugar until evenly coated.
Place dough balls 1 inch apart on parchment paper-lined sheet pans. Bake cookies at 350F 10-12 minutes until cookies are cracked and puffy on top. Enjoy!
