- Salmon - Unsalted butter - Parsley - Sweet potatoes - Garlic - Paprika
- Honey - Dijon mustard - Cider vinegar - Whole grain mustard
In a medium skillet, sauté garlic in butter until just fragrant. Remove from heat and add parsley.
Toss garlic butter with sweet potatoes and arrange in a single layer on half of a greased sheet pan. Roast at 400F 20 minutes until crisp-tender.
In a small bowl, mix honey, Dijon, whole grain mustard, cider vinegar, paprika, salt, and pepper to taste.
Remove sweet potatoes from oven and arrange salmon on other half of sheet pan. Spoon honey mustard over top of salmon.
Roast salmon and sweet potatoes at 400F 10-12 minutes until salmon registers 130F and sweet potatoes are tender. Enjoy!
