Sheet Pan Pesto Mozzarella Chicken

This chicken is...

- Perfectly juicy and covered in flavorful pesto and mozzarella. - Roasted alongside zucchini and cherry tomatoes. - Ready in 50 minutes with only 8 basic pantry ingredients needed.


- Zucchini - Basil - Cherry tomatoes - Garlic

- Mozzarella - Pesto - Olive oil - Chicken breasts

Prepare the chicken


Pat chicken dry and season with salt and pepper. Spread about 1 tablespoon pesto on each chicken breast and arrange on half of sheet pan.

Prepare the vegetables


In a large bowl, combine zucchini, cherry tomatoes, garlic, olive oil, salt and pepper. Toss until evenly combined.

Roast chicken


Arrange zucchini and cherry tomatoes on other half of pan and roast at 400F 25-30 minutes until chicken registers 165F and vegetables are tender.

Melt mozzarella


Arrange mozzarella slices on chicken and broil under high heat until mozzarella is melted, about 1-2 minutes.

Add toppings


Top chicken with a few extra drizzles of pesto and torn fresh basil leaves. Serve warm and enjoy!
