Spring Roll Salad

This spring roll salad is...

- An easy summer salad that's ready in 40 minutes. - Loaded with a rainbow of vegetables and lots of noodles. - Tossed in a flavorful spicy ginger dressing.


- Rice noodles - Cilantro - Mint - Garlic - Canola oil - Rice vinegar - Red pepper flakes - Agave

- Peanuts - Soy sauce - Ginger - Cabbage - Sweet pepper - Cucumber - Carrot - Sesame oil

Make the dressing


In a blender or food processor, combine ginger, garlic, soy sauce, agave, vinegar, sesame oil, canola oil, and red pepper flakes to taste. Blend dressing until smooth.

Build the salad


In a large bowl, combine rice noodles, cabbage, carrot, pepper, and cucumber.

Dress salad


Drizzle dressing over salad and add mint, cilantro, and peanuts.

Toss salad


Toss salad until evenly combined and season with salt and pepper to taste. Serve and enjoy!
