Arrange strawberries in a single layer on a sheet pan. Drizzle with maple syrup and roast at 400F 10-15 minutes.
In a medium saucepan, bring water and milk to a simmer over medium-high heat. Add oats, reduce heat to low, and allow to cook 10-15 minutes, stirring frequently.
Remove oatmeal from heat and stir in salt and 2 tablespoons maple syrup. Divide oatmeal between serving bowls and top with strawberries and milk. Enjoy!
