Strawberry shortcake is one of those desserts that I end up making all.the.time during the summer.
It’s never officially summer until I bake up those biscuits, slice up those strawberries, whip up that cream, and combine ’em all in one heavenly dessert. ♥
Definitely one of the highlights of my summer. 🙂
Classic strawberry shortcake holds a special place in my heart. (especially THIS recipe!) But recently I started brainstorming different ways to enjoy this classic dessert. Thus, these amazing cookies were born.
These cookies are my new favorite form of strawberry shortcake because….
A. They’re so easy and come together VERY quickly.
B. They’re super easy to serve.
C. They taste almost EXACTLY like the real thing.
D. They’re SO DANG CUTE!!
I donno, maybe it’s just me, but cute food just seems to taste better.
That’s definitely the case in these Strawberry Shortcake Cookies. 😀
These cookies are kind of genius, because they involve ALL the flavors of strawberry shortcake in the form of an easy, serve-able cookie.
Unlike classic strawberry shortcake, you don’t need to futz around with forks and plates to serve these cookies. Just set ’em out on a tray and watch them disappear.
Oh, and I promise that this is my last Memorial Day recipe. I know I’ve probably been driving you guys crazy lately with endless recipes like burgers and epic pasta salads. Last one, I promise!
And it’s a really good one. Like, really good. And it definitely belongs on your dessert menu for Memorial Day tomorrow.
Although, I must warn you: These cookies are so cute and so dang amazing, you might find yourself consuming more than one (or 5)
This recipe makes 15 huge cookies, but doubling the recipe might be a good idea if you’re making these cookies for a crowd, because believe me: They go and they go FAST.
Again, probably because of the cuteness factor. 😀
The actual cookies are homemade vanilla wafers. Have you ever tried making your own vanilla wafers? They are so easy to make and so much better than store-bought!
Of course, if you’re short on time when you’re making these cookies, you can always use store-bought vanilla wafers, but we much prefer homemade. It’s soo worth a little extra effort. 😀
You are going to need to chill the cookie dough before baking, because the dough needs to be rolled out thin and cut out into little circles. Chill time is mandatory otherwise you’ll have one heck of a time trying to roll out this cookie dough.
My cookies took precisely 11 minutes at 350F. You’ll know that they’re done when the edges start to turn golden. Make sure that you let your cookies cool completely before frosting.
The frosting for these cookies is pure heaven, guys. It’s a classic cream cheese frosting, but with the addition of finely chopped fresh strawberries.
Look at how creamy and gorgeous with the little specks of strawberries! I could seriously eat the entire contents of this bowl by myself. ♥
Once your cookies are cool, don’t waste any time in slathering up those babies with your lovely frosting.
I, myself like to pile, yes PILE, a ton of frosting on each cookie. For an elegant finishing touch, I garnish each cookie with sliced strawberries.

The vanilla wafers are soo soft and chewy…. the frosting is bursting with fresh strawberry flavor…. and oh-my-gosh-guys, they taste almost exactly like mini strawberry shortcakes.
My family couldn’t get enough of these cookies. I loved watching my 1-year old niece eating one of these cookies. She had the most ADORABLE little pink-cream-cheese-frosting mustache. 😀

Strawberry Shortcake Cookies
Ingredients
- COOKIES:
- 1/2 cup butter softened
- 3/4 cup xylitol or sugar
- 1 large egg
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
- 3/4 teaspoon baking soda
- 1-1/2 cups white whole wheat flour
- FROSTING:
- 3-4 large strawberries hulled
- 8 oz cream cheese softened
- 1/4 cup butter softened
- 1/2 cup xylitol or sugar
- 4-6 tablespoons heavy whipping cream
- Sliced strawberries for garnish optional
Instructions
- Prepare the cookies: Line two baking sheets with parchment paper. Set aside.
- In a large bowl, cream butter and xylitol (or sugar) until creamy. Beat in egg and vanilla until smooth. Add salt, baking soda, and flour, stirring until a dough forms. Form dough into a ball and wrap in plastic wrap. Chill in refrigerator 1-2 hours, or until firm. (dough may be stored in fridge up to 24 hours)
- On a floured surface, roll chilled cookie dough out to 1/4" thickness. Using a 3-in biscuit cutter, cut out cookie circles and place on prepared baking sheets. Bake cookies at 350F 11-12 minutes or until edges begin to turn golden. Cool cookies on baking sheet 5 minutes then transfer to a wire cooling rack to cool completely.
- While cookies cool, prepare the frosting: Place hulled strawberries in a food processor and pulse several times until finely chopped. (you should have about 1/2 cup finely chopped strawberries) Set aside.
- Place softened cream cheese and butter in a medium bowl. With an electric hand-held mixer, beat on medium speed until smooth. Beat in xylitol (or sugar) and enough heavy cream to make frosting spreadable. (if frosting is too thick, beat in a few more tablespoons cream) Fold finely chopped strawberries into frosting. Refrigerate frosting until ready to use.
- Pipe or spread frosting on cooled cookies and garnish with additional sliced strawberries if desired.
