Burst Tomato Gnocchi

- A creamy cherry tomato sauce - Fresh burrata cheese and basil - Ready in 30 minutes and goes well with a variety of meals

- Olive oil - Cherry tomatoes - Unsalted butter - Garlic - Tomato paste

- Granulated sugar - Heavy cream - Gnocchi - Basil

Ingredients

Heat olive oil in a skillet over medium-high heat. Add tomatoes and char on all sides until tomatoes are softened and bursting.

Add butter, garlic, tomato paste, and sugar and cook until fragrant, smashing tomatoes against pan to release juices. Add heavy cream and allow to simmer 2-3 minutes

Simmer sauce

Cook gnocchi in salted boiling water until al dente and drain.

Fold gnocchi into sauce until evenly coated. Season with salt and pepper to taste and top with chunks of burrata and fresh basil. Enjoy!
