- Pineapple juice - Lime juice - Soy sauce - Ginger - Garlic - Honey - Cornstarch

In a large shallow bowl, whisk pineapple juice, lime juice, soy sauce, ginger, garlic, honey, and cornstarch until smooth. Add chicken and marinate at least 2 hours.
Remove chicken from marinade and pat dry. Grill chicken and pineapple, turning occasionally until chicken registers 165F and pineapple is charred.
Bring marinade to a simmer over medium-high heat and allow to simmer 3-5 minutes to cook through, stirring occasionally.
Finely dice grilled pineapple and combine with tomato, jalapeno, cilantro, and lime juice in a large bowl. Season with salt and pepper to taste
Spoon rice into serving bowls and top with grilled chicken and pineapple salsa. Garnish bowls with fresh cilantro and lime juice and serve. Enjoy!
