Quinoa Burrito Bowls

- Blackened sweet potatoes - Fluffy quinoa and lots of toppings - Ready in under an hour and great for meal prepping

These bowls feature...

- Sweet potatoes - Olive oil - Spices - Quinoa - Black beans - Corn

- Tomatoes - Avocados - Lettuce - Cheese - Sour cream - Cilantro


Toss sweet potatoes with olive oil and spices and arrange on a sheet pan. Roast sweet potatoes at 400F 20-25 minutes until tender.

Divide quinoa between serving bowls and top with sweet potatoes, black beans, corn, tomato, avocado, lettuce, and cheese.
