- Short-grain rice - Kosher salt - Rice wine vinegar - Granulated sugar - Mayonnaise - Hot sauce
- Sesame oil - Red pepper flakes - Salmon - Scallion - Nori - Avocado
Combine rice, salt, and water in a medium saucepan. Bring to a simmer, then reduce heat to low, cover, and allow to cook 10-15 minutes until rice is fluffy.
Allow rice to cool in refrigerator then pack firmly into greased muffin cups. Bake rice cups at 425F 25-30 minutes until crispy.
In a large bowl, whisk mayonnaise, hot sauce, sesame oil, and red pepper flakes. Fold in salmon and scallion until evenly coated.
Place a square of nori in each rice cup and fill with salmon filling. Garnish cups with avocado, jalapeno, sesame seeds, and additional hot sauce. Enjoy!
