- A steak and peppers filling - A spicy homemade chipotle queso sauce - Minutes to make and an easy weeknight dinner
- Unsalted butter - Garlic - Chipotle - All-purpose flour - 2% milk - Heavy cream - Jack cheese
- Sirloin steak - Vegetable oil - Sweet pepper - Red onion - Flour tortillas - Cilantro - Cheddar cheese
In a small saucepan, melt butter. Stir in garlic, chipotle and flour. Slowly whisk in milk and heavy cream and cook until sauce is thickened. Stir in cheeses until melted.
Heat oil in a large skillet over medium-high heat. Add steak strips and saute until cooked through.
Add pepper and onion to pan drippings and saute over medium-high heat until tender. Add garlic and cook 1 additional minute.
Divide steak and peppers and cheeses between tortillas. Fold tortillas over into a half-circle.
Working in batches, heat butter in a large skillet over medium-high heat. Add quesadilla and cook 2-3 minutes on each side until golden brown.
Transfer quesadillas to a cutting board and cut into wedges. Serve quesadillas warm with chipotle queso and enjoy!
