- Cottage cheese - Honey - Vanilla extract - Strawberries - Lemon juice
- Oats - All-purpose flour - Brown sugar - Cinnamon - Unsalted butter
Combine oats, flour, brown sugar, cinnamon, and butter together in a small bowl until crumbly.
Arrange streusel on a parchment paper-lined sheet pan and bake at 350F 10-12 minutes until golden brown.
Simmer strawberries, honey, and lemon juice in a small saucepan 8-10 minutes until berries are slightly reduced and thickened.
Combine cottage cheese, honey, and vanilla extract in a blender or food processor.
Blend cottage cheese mixture on high speed 1-2 minutes until completely smooth and creamy.
Pour 1/3 of ice cream mixture in a 9x5 loaf pan. Top with 1/3 of strawberries and streusel. Repeat layers two more times and use a knife to swirl layers.
Cover pan and freeze 4-6 hours until ice cream is solid. Allow to soften slightly before scooping into bowls or cones and serving. Enjoy!
