Y’all, I was skeptical as heck when I saw this trend going around and being a savory cottage cheese lover, I had myself convinced ice cream wouldn’t work here.
Suffice to say this ice cream proved me wrong and everyone in my house is a believer now. This is seriously the most rich and creamy ice cream I’ve ever had and you definitely wouldn’t know it’s cottage cheese making up the bulk of it.
All the cottage cheese does here is provide a creamy base and gives this ice cream almost a cheesecake-like flavor. Not to mention you’re also getting 17.5 grams of protein per serving.
And the fact that we’re swirling a summer-fresh strawberry sauce and TONS of buttery oat streusel into every bite? Seals this perfect little ice cream deal.

Ingredients You Will Need
- Old-fashioned rolled oats
- All-purpose flour
- Brown sugar
- Cinnamon
- Unsalted butter
- Strawberries
- Honey
- Lemon juice
- Cottage cheese
- Vanilla extract
Choosing Your Cottage Cheese
We recommend using small-curd 4% milkfat cottage cheese for this ice cream. Since we’re relying solely on the cottage cheese for the ice cream base, this little bit of extra fat gives the ice cream a rich and creamy texture.
Low fat cottage cheese will work in this recipe, however, be aware that it will not turn out quite as creamy.
Tips for Perfect Cottage Cheese Ice Cream
- Make oat topping and strawberry sauce in advance – since the topping gets baked and the strawberry sauce simmered, these two components will need to cool before swirling into the ice cream. Instead of waiting around for them to cool, make them a few hours (or days!) in advance before assembling ice cream.
- Blend cottage cheese well – we recommend using either a blender or food processor to break down the cottage cheese. This could take as long as 1-2 minutes of constant blending until the cottage cheese turns completely smooth and creamy.
- Layer strawberry sauce and oat topping in ice cream – divide the sauce, topping, and ice cream into thirds and layer each third in a 9×5 loaf pan. This helps you get a little bit of everything in every bite!
- Soften ice cream before serving – because this ice cream isn’t churned, it does freeze up quite solid. Allow the ice cream to sit on the counter about 20 minutes before scooping.
Recipe Variations
Try these ideas for a different twist on this ice cream!
- Try a different fruit – blackberries, raspberries, blueberries, or peaches would all be great substitutes for the strawberries.
- Make it chocolate – swirl a few tablespoons of hot fudge sauce in with the strawberries and oat topping.
- Skip the oat topping – try crumbled cookies or graham crackers instead.
Storing Ice Cream
This ice cream stores well in the freezer up to 2 weeks. As mentioned above, make sure you let it sit on the counter 20 minutes before scooping since it will be frozen solid.
It really doesn’t seem like this ice cream should work, but gosh does it ever! The ice cream base has a rich cheesecake flavor that plays so well with the juicy strawberries and brown sugary oat streusel.

Strawberry Crisp Cottage Cheese Ice Cream

Ingredients
Oatmeal Crisp Topping
- 3/4 cup old-fashioned rolled oats
- 1/3 cup all-purpose flour
- 3 tablespoons light brown sugar
- 1/4 teaspoon ground cinnamon
- 3 tablespoons unsalted butter, melted
Strawberry Sauce
- 2 cups fresh or frozen strawberries, hulled and quartered
- 1/4 cup honey or agave nectar
- 1 tablespoon lemon juice
Cottage Cheese Ice Cream
- 1 carton (24 oz) 4% milkfat cottage cheese
- 1/2-2/3 cup honey or agave nectar
- 1 teaspoon vanilla extract
Instructions
Oatmeal Crisp Topping
- Preheat oven to 350F and line a medium sheet pan with parchment paper. Combine all topping ingredients in a medium bowl until crumbly then spread in an even layer on prepared sheet pan.
- Bake topping at 350F 10-12 minutes until a light golden brown. Remove from oven and set aside to cool.
Strawberry Sauce
- Combine strawberries, honey, and lemon juice in a medium saucepan over medium heat.
- Bring to strawberries to a simmer over medium heat, then reduce heat to medium-low and allow to simmer 8-10 minutes until slightly reduced, stirring and mashing strawberries occasionally. Set aside to cool.
Cottage Cheese Ice Cream
- Combine cottage cheese, honey, and vanilla in a food processor or blender. Blend on high speed 1-2 minutes until cottage cheese is completely smooth and no chunks remain. Add additional honey to taste if needed until you get the sweetness level you desire.
- Pour 1/3 of ice cream into the bottom of a 9×5 loaf pan. Top with 1/3 of strawberry sauce and oatmeal crisp topping. Repeat layers two more times ending with oatmeal crisp topping. Use a knife to gently swirl all the layers.
- Cover pan tightly with aluminum foil and place in freezer. Freeze ice cream 4-6 hours until solid.
- Allow ice cream to sit at room temperature 20 minutes to soften before scooping ice cream into bowls or cones and serving. Enjoy!
