Streusel Pumpkin Muffins

In a large bowl, whisk pumpkin, sugars, eggs, oil, yogurt, and vanilla until smooth.

Mix liquid ingredients


In a separate bowl, combine flour, baking powder, baking soda, and pumpkin pie spice. Fold into liquid mixture until just combined.

Mix dry ingredients


In a small bowl, combine flour, melted butter, brown sugar, pecans, and cinnamon until crumbly.

Make streusel


Fill muffin cups to brim with batter and top with streusel, pressing lightly to adhere.

Bake muffins at 425F 5 minutes, then reduce heat to 350F and bake an additional 20-25 minutes until a toothpick inserted in center of a muffin comes out clean.
