Vegetable Pad Thai

Ingredients

In a small bowl, combine brown sugar, tamarind, soy sauce, and sweet chili sauce until smooth. Set aside for a moment.

Make sauce

Cook rice noodles according to package instructions until al dente. Drain, rinse, and set aside in a bowl.

Cook noodles

Saute sweet pepper, green onion, broccoli, and mushrooms until tender. Add noodles, scrambled eggs, and bean sprouts.

Build pad thai

Pour sauce into pan and cook several minutes until noodles and vegetables are evenly coated. Top with fresh cilantro, peanuts, and lime. Enjoy!
