Apple Cider Donut Bread

Incredibly moist and packed with apple cider flavors and warm fall spices, this apple cider donut bread tastes almost exactly like the classic donut!

Ingredients

  • 1 cup apple cider
  • 1/3 cup melted butter
  • 1/2 cup light brown sugar
  • 1/4 cup, plus 3 tablespoons granulated sugar, divided
  • 1/4 cup unsweetened applesauce
  • 1/4 cup Greek yogurt
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 4 teaspoons ground cinnamon, divided
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cardamom

Instructions

  • Preheat oven to 350F. Line a 9x5 loaf pan with parchment paper and set aside.
  • Pour apple cider into a saucepan and bring to a simmer over medium-high heat. Reduce heat to medium-low and allow to simmer 10-15 minutes until apple cider is reduced in half. Remove from heat and allow to cool slightly.
  • In a large bowl, whisk reduced apple cider, butter, brown sugar, 1/4 cup granulated sugar, applesauce, yogurt, egg, and vanilla until smooth.
  • In a separate medium bowl, combine flour, baking powder, baking soda, salt, 2 teaspoons cinnamon, nutmeg, allspice, and cardamom. Gently fold flour mixture into liquid until batter is just combined.
  • In a separate small bowl, combine remaining 3 tablespoons sugar and 2 teaspoons cinnamon. Scrape batter into prepared pan and top with cinnamon sugar.
  • Bake bread at 350F 40-45 minutes until a toothpick inserted in center of bread comes out clean.
  • Remove bread from oven and allow to cool completely in pan on a wire cooling rack. Once cooled, remove from pan and slice. Enjoy!

Notes

Storing Instructions
Store bread sealed at room temperature up to 4 days. Bread may be frozen up to 2 months.
