This apple walnut salad is simply loaded with crisp honeycrisp apples, crunchy walnuts, golden grilled cheese croutons and generously doused in a sweet apple cider vinaigrette.
In a small bowl, whisk apple cider, lemon juice, Dijon, and honey until smooth. Slowly add olive oil, whisking constantly until dressing is smooth. Season with salt and pepper to taste and set aside.
Apple Walnut Salad
Arrange greens on a large platter or in a bowl. Arrange apples, walnuts, and rosemary on top of greens and set aside for a moment.
Place bread slices on a cutting board and butter each slice with softened butter. Place bread butter-side down on cutting board. Layer 1 slice of each kind of cheese on half of bread slices. Top with other bread slices to form 2 sandwiches.
Cook grilled cheese in a large nonstick skillet over medium heat 3-4 minutes per side until grilled cheese is golden brown and cheese is melted.
Transfer grilled cheese to a cutting board and cut into 1/2-inch cubes. Arrange on top of greens and serve salad immediately with apple cider dressing drizzled over top.
