Bacon Dill Pickle Pasta Salad

Pickle-lovers won't be able to resist this loaded dill pickle pasta salad! Tender pasta is tossed in a creamy dill pickle juice dressing with lots of smoky bacon, cheddar, and extra dill pickles.

Ingredients

Pickle Dressing

  • 3/4 cup mayonnaise
  • 3/4 cup plain Greek yogurt
  • 1/2 cup dill pickle juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Dill Pickle Pasta Salad

  • 1 lb pasta (spiral, shells, elbows, penne, etc)
  • 6 strips bacon, diced into 1/4-inch cubes and pan fried until crispy
  • 4 oz mild or sharp cheddar cheese, cut into 1/4-inch cubes
  • 1 cup finely-diced dill pickles
  • 1/2 cup finely-diced red onion
  • 2 tablespoons minced fresh dill
  • Salt and pepper to taste

Instructions

Pickle Dressing

  • In a small bowl, whisk mayonnaise, yogurt, pickle juice, and garlic powder. Season dressing with salt and pepper to taste.

Dill Pickle Pasta Salad

  • Cook pasta according to package instructions until al dente. Drain pasta, rinse in cold water to cool, and place in a large bowl.
  • Add bacon, cheddar, pickles, red onion, dill, and dressing to pasta and fold until evenly coated in dressing.
  • Season pasta salad with salt and pepper to taste and refrigerate until ready to serve. Enjoy!
