Bacon Dill Pickle Pasta Salad
Pickle-lovers won't be able to resist this loaded dill pickle pasta salad! Tender pasta is tossed in a creamy dill pickle juice dressing with lots of smoky bacon, cheddar, and extra dill pickles.

Pickle Dressing 3/4 cup mayonnaise 3/4 cup plain Greek yogurt 1/2 cup dill pickle juice 1 teaspoon garlic powder Salt and pepper to taste Dill Pickle Pasta Salad 1 lb pasta (spiral, shells, elbows, penne, etc) 6 strips bacon, diced into 1/4-inch cubes and pan fried until crispy 4 oz mild or sharp cheddar cheese, cut into 1/4-inch cubes 1 cup finely-diced dill pickles 1/2 cup finely-diced red onion 2 tablespoons minced fresh dill Salt and pepper to taste
Pickle Dressing In a small bowl, whisk mayonnaise, yogurt, pickle juice, and garlic powder. Season dressing with salt and pepper to taste.
Dill Pickle Pasta Salad Cook pasta according to package instructions until al dente. Drain pasta, rinse in cold water to cool, and place in a large bowl.
Add bacon, cheddar, pickles, red onion, dill, and dressing to pasta and fold until evenly coated in dressing.
Season pasta salad with salt and pepper to taste and refrigerate until ready to serve. Enjoy!
