Balsamic Bleu Cheese Grilled Steak Strawberry Salad

Ingredients

Balsamic Dressing

Strawberry Salad

  • 4 cups spring greens mix
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup crumbled bleu cheese
  • 1/4 cup chopped walnuts, toasted

Grilled Steak

  • 1 (1 lb) top round steak, fat trimmed and patted dry
  • 2 teaspoons olive oil
  • Kosher salt and pepper for seasoning

Instructions

Balsamic Dressing

  • In a small bowl, whisk balsamic, mustard, and honey together until smooth. Slowly drizzle in olive oil, whisking constantly until dressing is smooth. Season with salt and pepper to taste. Store dressing in fridge until ready to serve.

Strawberry Salad

  • In a large serving bowl, combine greens, strawberries, cheese, and walnuts. Set aside.

Grilled Steak

  • Rub steak all over with olive oil and season with salt and pepper to taste. Grill steak over a preheated grill, turning once until steak reaches your desired doneness (4 minutes for medium-rare, 5-6 minutes for medium)
  • Let steak rest 10 minutes then thinly slice against the grain. Toss balsamic dressing into salad then arrange steak on top of salad. Serve salad immediately and enjoy!
