Perfectly crunchy homemade banana pecan granola with the delicious combination of sweet bananas and crunchy pecans - you'll never buy store-bought granola again!
Preheat oven to 300F and line a large sheet pan with parchment paper. Set aside.
In a large bowl, combine oats, pecans, flaxseeds, sugar, cinnamon, nutmeg, and salt. Pour mashed banana, maple syrup, coconut oil, and vanilla over top and fold well until combined.
Spread granola in an even layer in pan. Bake granola at 300F 40-45 minutes, stirring once halfway through baking, until granola is golden-brown. Allow granola to cool completely before breaking into chunks and stirring in banana chips. Enjoy!
