  • Preheat oven to 300F and line a large sheet pan with parchment paper. Set aside.
  • In a large bowl, combine oats, pecans, flaxseeds, sugar, cinnamon, nutmeg, and salt. Pour mashed banana, maple syrup, coconut oil, and vanilla over top and fold well until combined.
  • Spread granola in an even layer in pan. Bake granola at 300F 40-45 minutes, stirring once halfway through baking, until granola is golden-brown. Allow granola to cool completely before breaking into chunks and stirring in banana chips. Enjoy!
