Citrus Poppyseed Dressing

Blackberry Goat Cheese Salad

  • 6 cups spring greens mix
  • 1 cup fresh blackberries
  • 2 medium avocados, pitted and diced
  • 1/2 cup chopped or halved pecans, toasted
  • 3/4 cup crumbled goat cheese

Instructions

Citrus Poppyseed Dressing

  • In a small bowl, whisk lime juice, orange juice, lemon juice, mustard, honey, and poppyseeds until smooth. Gradually drizzle in olive oil, whisking constantly until dressing is smooth. Season dressing with salt and pepper to taste and set aside for a moment.

Blackberry Goat Cheese Salad

  • In a large bowl, combine greens, blackberries, avocado, pecans, and goat cheese. Drizzle dressing over top and toss salad to evenly coat. Serve immediately and enjoy!
