Ingredients
BLT Salad
6cupschopped romaine lettuce
2cupscherry tomatoes, halved
1smallred onion, thinly sliced
8slicesbacon, cooked until crisp and chopped into 1/2-inch pieces
8ozfresh mozzarella (cubed or pearls)
2cupscroutons
Avocado Ranch Dressing
1mediumripe avocado, diced
1/4cupplain Greek yogurt
2tablespoonsmayonnaise
1/4cuplightly-packed basil leaves
1mediumclove garlic, minced
1tablespoonlime juice
2-4tablespoons2% or skim milk
Salt and pepper to taste
Instructions
BLT Salad
Place lettuce in a large serving bowl and top with cherry tomatoes, red onion, bacon, mozzarella, and croutons. Set aside for a moment.
Avocado Ranch Dressing
Place avocado, yogurt, mayonnaise, basil, garlic, lime juice, and 2 tablespoons milk in a food processor, Process dressing on high speed until smooth, scraping down sides as necessary. Thin dressing with additional milk as needed and season with salt and pepper to taste.
Drizzle avocado dressing over assembled salad and toss to coat. Serve immediately and enjoy!
