This BLT salad features all the things you love about a classic BLT including crispy bacon bits, fresh romaine lettuce, juicy tomatoes, and even a creamy avocado ranch dressing drizzled on top.

Ingredients

BLT Salad

  • 6 cups chopped romaine lettuce
  • 2 cups cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 8 slices bacon, cooked until crisp and chopped into 1/2-inch pieces
  • 8 oz fresh mozzarella (cubed or pearls)
  • 2 cups croutons

Avocado Ranch Dressing

  • 1 medium ripe avocado, diced
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1/4 cup lightly-packed basil leaves
  • 1 medium clove garlic, minced
  • 1 tablespoon lime juice
  • 2-4 tablespoons 2% or skim milk
  • Salt and pepper to taste

Instructions

BLT Salad

  • Place lettuce in a large serving bowl and top with cherry tomatoes, red onion, bacon, mozzarella, and croutons. Set aside for a moment.

Avocado Ranch Dressing

  • Place avocado, yogurt, mayonnaise, basil, garlic, lime juice, and 2 tablespoons milk in a food processor, Process dressing on high speed until smooth, scraping down sides as necessary. Thin dressing with additional milk as needed and season with salt and pepper to taste.
  • Drizzle avocado dressing over assembled salad and toss to coat. Serve immediately and enjoy!

Storing Instructions
Salad is best if served immediately after assembly.
