Caramelized Onion Bacon Fried Cabbage

Ingredients

  • 4 strips bacon
  • 1 tablespoon unsalted butter
  • 2 large sweet onions, thinly sliced
  • 3 medium cloves garlic, minced
  • 1 small head green or purple cabbage, finely-chopped (about 6-8 cups)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons honey or agave nectar
  • Salt and pepper to taste

Instructions

  • Cook bacon strips in a large skillet or Dutch oven over medium heat, turning occasionally until crispy. Drain bacon on paper towels and finely dice.
  • Drain the bacon grease into a small bowl and set aside. Melt butter in same pan over medium-low heat. Add onions and stir occasionally until onions are a deep caramelized color, about 30-35 minutes. Add garlic and cook 1 minute until fragrant. Place caramelized onions in a bowl and set aside.
  • Pour reserved bacon grease into same pan and heat over medium-high heat. Add cabbage and saute 5-8 minutes until cabbage is tender.
  • Add caramelized onions, Dijon mustard, apple cider vinegar, honey, and bacon to cabbage and fold over medium-high heat 2-3 additional minutes until cabbage is evenly coated. Season cabbage with salt and pepper to taste and serve warm. Enjoy!
