Ingredients
4stripsbacon
1tablespoonunsalted butter
2largesweet onions, thinly sliced
3mediumcloves garlic, minced
1small headgreen or purple cabbage, finely-chopped (about 6-8 cups)
Cook bacon strips in a large skillet or Dutch oven over medium heat, turning occasionally until crispy. Drain bacon on paper towels and finely dice.
Drain the bacon grease into a small bowl and set aside. Melt butter in same pan over medium-low heat. Add onions and stir occasionally until onions are a deep caramelized color, about 30-35 minutes. Add garlic and cook 1 minute until fragrant. Place caramelized onions in a bowl and set aside.
Pour reserved bacon grease into same pan and heat over medium-high heat. Add cabbage and saute 5-8 minutes until cabbage is tender.
Add caramelized onions, Dijon mustard, apple cider vinegar, honey, and bacon to cabbage and fold over medium-high heat 2-3 additional minutes until cabbage is evenly coated. Season cabbage with salt and pepper to taste and serve warm. Enjoy!
