Caramelized Onion Chickpea Dip

Baked with tender caramelized onions and lots of gooey cheese, this caramelized onion chickpea dip is the best hot and cheesy appetizer!

Ingredients

  • 1 tablespoon unsalted butter
  • 1 large sweet onion, thinly sliced
  • 2 medium cloves garlic, minced
  • 2 teaspoons minced fresh thyme
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 tablespoon Worcestershire sauce
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup shredded gruyere cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh chives for topping
  • Crostini for dipping

Instructions

  • Melt butter in a large skillet over medium-low heat. Add onions and stir occasionally until onions are a deep caramelized color, about 30-35 minutes. Add garlic and thyme and cook 1 minute until fragrant. Place caramelized onions in a bowl and set aside.
  • Preheat oven to 375F and lightly grease a 9-inch skillet or baking dish. Mix cream cheese, sour cream, and Worcestershire sauce into caramelized onions until smooth and creamy.
  • Place chickpeas in a bowl and mash well with a fork. Fold into cream cheese mixture and season mixture with salt and pepper to taste.
  • Scrape chickpea mixture into prepared skillet or baking dish. Top with gruyere and Parmesan cheese.
  • Bake chickpea dip at 375F 15-20 minutes until dip is bubbly. Optionally, broil dip on high 2-3 minutes to brown the cheese. Top dip with fresh chives and serve warm with crostini for dipping. Enjoy!
