Ingredients
1tablespoonunsalted butter
1largesweet onion, thinly sliced
2medium clovesgarlic, minced
2teaspoonsminced fresh thyme
8ozcream cheese, softened
1/2cupsour cream
1tablespoonWorcestershire sauce
1can (15 oz)chickpeas, rinsed and drained
1cupshredded gruyere cheese
1/2cupgrated Parmesan cheese
Fresh chives for topping
Crostini for dipping
Instructions
Melt butter in a large skillet over medium-low heat. Add onions and stir occasionally until onions are a deep caramelized color, about 30-35 minutes. Add garlic and thyme and cook 1 minute until fragrant. Place caramelized onions in a bowl and set aside.
Preheat oven to 375F and lightly grease a 9-inch skillet or baking dish. Mix cream cheese, sour cream, and Worcestershire sauce into caramelized onions until smooth and creamy.
Place chickpeas in a bowl and mash well with a fork. Fold into cream cheese mixture and season mixture with salt and pepper to taste.
Scrape chickpea mixture into prepared skillet or baking dish. Top with gruyere and Parmesan cheese.
Bake chickpea dip at 375F 15-20 minutes until dip is bubbly. Optionally, broil dip on high 2-3 minutes to brown the cheese. Top dip with fresh chives and serve warm with crostini for dipping. Enjoy!
