Chickpea Lettuce Wraps with Green Goddess Sauce

Ingredients

Green Goddess Sauce

  • 2 tablespoons plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon basil pesto
  • 1 medium clove garlic, peeled
  • 1 tablespoon capers
  • 1 tablespoon lemon juice
  • 1/4 cup lightly-packed baby spinach
  • 1/4 cup lightly-packed basil leaves
  • 1/4 cup lightly-packed parsley or cilantro
  • Salt and pepper to taste

Chickpea Lettuce Wraps

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/2 cup lightly-packed baby spinach, finely chopped
  • 1/2 cup cucumber, diced into 1/4-inch cubes
  • 1 medium avocado, pitted and diced into 1/4-inch cubes
  • 1/4 cup minced red onion
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste
  • 8 butter lettuce leaves
  • Additional feta and fresh herbs for garnish

Instructions

Green Goddess Sauce

  • Combine all sauce ingredients in a blender or food processor and blend on high speed until smooth. Season sauce with salt and pepper to taste and store in refrigerator.

Chickpea Lettuce Wraps

  • Place chickpeas in a large bowl and use a fork or potato masher to lightly mash. Add spinach, cucumber, avocado, red onion, feta, and green goddess sauce and fold until evenly combined. Season salad with salt and pepper to taste
  • Spoon salad into lettuce leaves and garnish wraps with additional feta and fresh herbs. Serve immediately and enjoy!

Storing Instructions
