Corned Beef Nachos

These corned beef nachos feature waffle fries that are loaded down with Irish cheddar cheese, corned beef, and tons of toppings for a fun twist on nachos!

Ingredients

  • 1 package (24 oz) waffle-cut fries
  • 1-1/2 cups shredded Irish white cheddar cheese
  • 1-1/2 cups diced corned beef
  • 1/2 cup sauerkraut, drained and squeezed dry
  • 1/2 cup pickled jalapenos
  • 1/2 cup sliced green onions
  • 1 medium tomato, diced into 1/4-inch cubes
  • Sour cream for serving

Instructions

  • Preheat oven to 400F Line a large sheet pan with parchment paper and arrange waffle fries in a single layer on sheet pan. Bake waffle fries at 400F 30-35 minutes until waffle fries are a light golden brown and crispy.
  • Remove waffle fries from oven and top with cheddar cheese and corned beef. Return to oven and bake nachos at 400F an additional 10-15 minutes until cheese is melted.
  • Remove nachos from oven and top with sauerkraut, pickled jalapenos, green onions, and tomato. Serve individual servings of nachos with a dollop of sour cream. Enjoy!

Nachos are best if served immediately after baking.
