These soft and chewy chocolate banana granola bars are packed with tons of banana flavor and a double dose of chocolate. Ideal for make-ahead breakfasts and they freeze great as well!

  • Preheat oven to 350F. Line a 9-inch square baking pan with parchment paper and set aside.
  • In a large bowl, combine mashed bananas, honey, peanut butter, coconut oil, and vanilla until smooth. Add oats, cocoa, flaxseeds, chia seeds, salt, and chocolate chips and fold until dough is just combined.
  • Firmly pack granola bar mixture into prepared baking pan and press a few banana slices on top if desired. Bake granola bars at 350F 20-25 minutes until bars are firm to the touch.
  • Allow granola bars to cool completely on a wire cooling rack before slicing into bars. Enjoy!

Store granola bars in an airtight container at room temperature up to 6 days.
