Ingredients

Greek Dressing

Salad

  • 12 oz pasta (cavatappi, penne, elbows, etc)
  • 1 medium avocado, pitted and diced into 1/2-in cubes
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, diced into 1/2-in cubes
  • 1/2 cup finely-diced red onion
  • 1/4 cup roasted red peppers, finely diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup kalamata olives, halved
  • 1 tablespoon minced fresh parsley
  • Salt and pepper to taste

Instructions

Greek Dressing

  • In a small bowl, whisk lemon juice, Dijon, honey, oregano, basil, and garlic until smooth. Slowly begin drizzling in olive oil until dressing is smooth. Season dressing with salt and pepper to taste.

Salad

  • Cook pasta according to package directions and rinse well in cold water until cooled. Transfer to a large bowl and add avocado, tomatoes, cucumber, red onion, roasted red pepper, feta, olives, parsley, and Greek dressing.
  • Fold salad until evenly coated and season with salt and pepper to taste. Refrigerate salad until ready to serve and enjoy!

Store pasta salad in refrigerator up to 3 days.
