This Greek pasta salad features tender pasta and tons of fresh Greek ingredients tossed in a flavorful lemon herb vinaigrette for an easy standout side dish!
1mediumavocado, pitted and diced into 1/2-in cubes
1cupcherry tomatoes, halved
1smallcucumber, diced into 1/2-in cubes
1/2cupfinely-diced red onion
1/4cuproasted red peppers, finely diced
1/2cupcrumbled feta cheese
1/4cupkalamata olives, halved
1tablespoonminced fresh parsley
Salt and pepper to taste
Instructions
Greek Dressing
In a small bowl, whisk lemon juice, Dijon, honey, oregano, basil, and garlic until smooth. Slowly begin drizzling in olive oil until dressing is smooth. Season dressing with salt and pepper to taste.
Salad
Cook pasta according to package directions and rinse well in cold water until cooled. Transfer to a large bowl and add avocado, tomatoes, cucumber, red onion, roasted red pepper, feta, olives, parsley, and Greek dressing.
Fold salad until evenly coated and season with salt and pepper to taste. Refrigerate salad until ready to serve and enjoy!
