Ingredients
1/4cupfreshly-squeezed lime juice
1tablespoongrated lime zest
2tablespoonsvegetable or canola oil
3medium clovesgarlic, crushed
1/2cupfirmly-packed cilantro, minced
1/4teaspoonred pepper flakes (optional)
Kosher salt and pepper to taste
1-1/2lbsboneless skinless chicken breasts or thighs
Additional minced fresh cilantro for topping
Instructions
In a large bowl, whisk lime juice, zest, oil, garlic, cilantro, and red pepper flakes until combined. Season marinade well with salt and pepper to taste.
Place chicken in a sealable bag or a shallow bowl and pour marinade over top. Seal bag shut and place on a plate or cover bowl. Marinate chicken in fridge 2 hours or up to 12.
Preheat an outdoor grill to 400F OR prepare a large skillet to use indoors on stovetop by greasing well. Remove chicken from marinade and discard marinade.
Arrange chicken on grill or in skillet on stovetop and allow to cook, turning occasionally for 8-10 minutes until chicken registers 165F. Top chicken with additional cilantro and serve warm. Enjoy!
