Grilled Steak Fajita Bowls with Chimichurri

Juicy grilled sirloin steak, sweet peppers, and an herby fresh chimichurri sauce make for the ultimate summer steak fajita bowls.

Ingredients

Chimichurri Sauce

  • 1 small shallot, minced
  • 3 medium cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/3 cup white wine vinegar
  • 1/3 cup extra-virgin olive oil
  • 1/2 cup firmly-packed parsley leaves, minced
  • 1/2 cup firmly-packed basil leaves, minced
  • Salt and pepper to taste

Grilled Steak Fajita Bowls

  • 1 lb top sirloin steak, fat trimmed
  • 2 tablespoons vegetable or canola oil, divided
  • Kosher salt and pepper
  • 2 medium whole sweet peppers
  • 1 medium yellow onion, thinly sliced
  • 4 cups cooked hot white or brown rice
  • Tortilla chips, sliced avocado, black beans, tomatoes, and lime wedges for serving

Instructions

Chimichurri Sauce

  • In a medium bowl, whisk shallot, garlic, red pepper flakes, and vinegar together. Slowly drizzle in olive oil, whisking constantly until smooth. Mix in parsley and basil and season chimichurri with salt and pepper to taste. Store chimichurri in refrigerator until ready to use.

Grilled Steak Fajita Bowls

  • Remove steak from refrigerator 30 minutes before ready to grill. Rub steak with 1 tablespoon vegetable oil and season well with salt and pepper. Lightly rub sweet peppers with 1/2 tablespoon oil and season with salt and pepper. Place onions in the center of a foil packet, toss with remaining 1/2 tablespoon oil and season with salt and pepper.
  • Preheat an outdoor grill to 400F OR heat a large cast iron grill pan on stovetop over medium-high heat. Place steak in a single layer on preheated grill or in pan on stovetop and turn occasionally until steak reaches desired doneness (see blog post for cooking guide). Transfer steak to a cutting board, lightly tent with foil, and allow to rest 10 minutes while you cook the peppers and onions.
  • Place peppers directly on grill grates and arrange onion packet alongside. Turn peppers and onions occasionally 4-6 minutes until peppers are lightly charred and onions are tender. Alternatively, if cooking indoors, thinly slice peppers and onions and sauté over medium-high heat until tender.
  • Thinly slice rested steak against the grain. Thinly slice peppers into strips and toss with steak and onions.
  • Divide cooked rice and steak mixture between 4 serving bowls. Top bowls with suggested toppings and drizzle with chimichurri sauce. Serve immediately and enjoy!
