This cherry tomato orzo skillet features tender orzo in a spicy harissa cherry tomato sauce, lots of fresh herbs, and creamy burrata cheese broken open over top.
1lborzo pasta, cooked according to package instructions and kept warm
1/4cupminced fresh basil
2tablespoonsminced fresh oregano
Salt and pepper to taste
8ozroom-temperature burrata cheese, patted dry
Instructions
Heat a 9-inch cast iron skillet or stainless steel skillet over medium-high heat. Add olive oil and swirl to coat bottom. Add tomatoes and char on all sides, turning occasionally until tomatoes are softened and bursting, about 6-8 minutes of cooking.
Reduce heat to medium and add butter, garlic, and harrisa paste. Cook 2-3 minutes until fragrant.
Add orzo, basil, and oregano to skillet and toss to evenly coat. Cook several minutes over medium heat, stirring occasionally until heated through.
Season skillet with salt and pepper to taste. Break burrata open and arrange on top of skillet. Serve orzo warm and enjoy!
