Instructions

Mango Salsa

  • In a medium bowl, combine all salsa ingredients. Season salsa with salt and pepper to taste and refrigerate until ready to serve.

Honey Mustard Chicken Bowls

  • Preheat oven to 375F. In a small bowl, whisk honey, both mustards, and apple cider vinegar. Season honey mustard with salt and pepper to taste and set aside for a moment.
  • Season chicken thighs all over with salt and pepper. Heat a large oven-safe skillet over medium-high heat. Once pan is hot, add oil to pan and swirl to evenly coat. Add chicken thighs in a single layer and sear 3-4 minutes on each side until golden-brown.
  • Remove pan from heat and spoon half of honey mustard over seared chicken. Transfer pan to oven and bake chicken at 375F 5-10 minutes until chicken registers 165F. Transfer chicken to a cutting board and thinly slice into strips.
  • Divide rice between 4 serving bowls and top with chicken and mango salsa. Drizzle chicken with additional honey mustard and serve warm. Enjoy!
