These soft and chewy pumpkin granola bars are packed with gooey chocolate, crunchy pepitas, and sweet dried cranberries. A filling grab-and-go breakfast or snack!

  • Preheat oven to 350F. Line a 9-inch square baking pan with parchment paper and set aside.
  • In a large bowl, whisk pumpkin puree, honey, egg, coconut oil, and vanilla extract until smooth. Fold in oats, flaxseeds, pumpkin pie spice, salt, pepitas, cranberries, and chocolate chips until just combined.
  • Firmly pack granola bar mixture into prepared baking pan. Bake granola bars at 350F 20-25 minutes until bars are golden brown and set.
  • Allow granola bars to cool completely on a wire cooling rack before slicing into bars. Enjoy!

Notes

Storing Instructions
Store granola bars in an airtight container at room temperature up to 4 days. Granola bars may also be frozen up to 2 months.
