These soft and chewy pumpkin granola bars are packed with gooey chocolate, crunchy pepitas, and sweet dried cranberries. A filling grab-and-go breakfast or snack!
Preheat oven to 350F. Line a 9-inch square baking pan with parchment paper and set aside.
In a large bowl, whisk pumpkin puree, honey, egg, coconut oil, and vanilla extract until smooth. Fold in oats, flaxseeds, pumpkin pie spice, salt, pepitas, cranberries, and chocolate chips until just combined.
Firmly pack granola bar mixture into prepared baking pan. Bake granola bars at 350F 20-25 minutes until bars are golden brown and set.
Allow granola bars to cool completely on a wire cooling rack before slicing into bars. Enjoy!
