Ingredients
Filling
6ozsmoked salmon, thinly sliced
1mediumavocado, diced into 1/2-in cubes
1/2cupcucumber, cut into 1/2 in cubes
1mediumsweet pepper, cored and thinly sliced into 1/2-in strips
In a medium bowl, combine all filling ingredients. Store in fridge until ready to use.
Garlic Walnut Pesto
Combine basil, walnuts, Parmesan, and garlic in food processor. With food processor running, drizzle olive oil through top, scraping down sides as necessary, until pesto is smooth. Season pesto with salt and pepper to taste.
When ready to serve, toss pesto with smoked salmon filling. Fill lettuce leaves with smoked salmon filling. Serve immediately and enjoy!
