Easy to whip up and even more fun to eat whenever you need a boost of energy, these healthy banana bread-flavored energy bites will keep you going all day!
Question: How does one make it through an afternoon without one of these energy bites?
Even more importantly, how are you guys even living and breathing right now without 5 of these under your belt?
I’m just gonna go out on a limb here and say that we should probably fix that sad situation before you fall over from Thursday exhaustion. Banana bread-flavored, chocolate chip-loaded energy bites to the rescue!
I mean, it’s so time to get your snack on already and I’m totally here to help you out with that. Both in the actual recipe part and face-shoving-at-100-miles-per-hour part if you’re feeling generous today. 😉
Let’s discuss all the goodness loaded into these bites. It’s good-for-ya stuff of course! We’ve got Medjool dates, (loooooove these things!) ripe banana, almond flour and coconut flour, shredded coconut, almonds, chia seeds, a pinch of salt and dash of vanilla, and of course, cuter-than-a-button mini chocolate chips.
Seriously peeps, the dough tastes like chocolate chip banana bread. You may swoon now.
Everything except the chocolate chips gets a quick mix in the food processor, then the chocolate gets stirred in, the dough portioned into little balls (with of course, lots of tasting along the way) and then it’s just chill and devour! Devour them all.
Confession, guys: I literally cannot even stop eating these energy bites and actually can’t even stop thinking about them either because they are just so ridiculously fantastic. Also, because I actually have 2 million of them in storage.
No, seriously, I made the HUGEST batch of these the other day to add to my already-existing batch and now I totally have enough energy bites to last me years.
Okay, maybe weeks. Week?
Speaking of which, I should probably go grab another from my endless supply. A girl’s gotta keep her energy going right?
Full steam ahead to FRIDAY with all the energy!
