I bring to you not only a Friday-worthy salad but a 2019 health-ified salad.
There’s steak and there’s cheese. You’re welcome.
Greek salad is by far my favorite type of salad. Honestly, anything with feta is my favorite, I’ll be honest.
But this salad is legit. There’s all the Greek fixins. Marinated steak. Tangy honey balsamic dressing. Rest assured that I would make multiple meals out of this and I totally did.
Oh my gosh, the STEAK for this salad is nothing short of legendary. I let it marinate for a few hours in a tangy yogurt marinade and it seriously builds so much flavor and juiciness into the meat. A standard steak sear to cook it off and you’ve got steak worthy of one king of a salad.
And this greek salad is in fact, the king. Lettuce, diced cucumber, tomato, a whooooooole bunch of feta and a quick honey balsamic vinegar dressing gets tossed together and you will soon be eating this goodness straight outta the salad bowl.

Greek Steak Salad with Honey Balsamic Dressing

Ingredients
Greek Marinated Beef
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 3 cloves minced garlic
- 2 tablespoons fresh minced parsley
- 1/4 cup greek yogurt
- Salt and pepper to taste
- 2 medium flank steaks (1-1/2 lbs total)
Salad
- 3 cups chopped romaine lettuce
- 1 medium cucumber, diced into 1-in cubes
- 1 medium tomato, diced into 1-in cubes
- 1/2 cup kalamata olives
- 1/2 cup crumbled feta
Dressing
- 1/4 cup honey
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1/2 teaspoon ground mustard
- Salt and pepper to taste
Instructions
Greek Marinated Beef
- In a small bowl, whisk 2 tablespoons olive oil, lemon juice, garlic, parsley, yogurt, and salt and pepper to taste. Place beef in a ziplock bag and pour marinade on top. Seal bag and turn several times to coat beef. Place in refrigerator and let marinate 2 hours or up to 24 hours.
- Remove beef from marinade and discard marinade. Heat remaining 2 tablespoons olive oil in a large skillet over medium-high heat until shimmery. Place steaks in skillet and sear 3-4 minutes on each side until steak is medium to medium-rare (or your choice of doneness) Allow steak to rest on a cutting board 10 minutes, then thinly slice into cubes against the grain.
Salad
- In a large serving bowl, combine all salad ingredients and cubed beef. Set aside for a moment.
Dressing
- In a small bowl, whisk all dressing ingredients until smooth. Season with salt and pepper to taste. When ready to serve, pour dressing over salad and toss to combine. Serve immediately and enjoy!
